Hi Harry,
Sounds like JTKM might be the way to go. If you decide on Honda there are quite a few things you can do to lighten package. We ran with a Shart chassis, and saved about 5kg, by doing the following.
Smaller steering wheel
Smaller brake disc,
Smaller brake caliper (Shark use a tiny one)
Used pod bars and nose cone bar without chrome plating
Light weight side pods
Carbon fibre seat (Can do the floor tray as well)
You can even get light weight suits (Don't cut out the lining thought as this is dangerous)
Just a thought
