I wouldn't advise easy outs - the bleed nipples are too thin walled and the broad taper of the easy out will strip the good thread on the brake caliper (don't ask how I know !) If its a good caliper otherwise, and get a machine shop or maybe vintage bike shop (common problem for them) to carefully drill out the steel of the nipple to the right size for the original thread, so that all that remains is the wire thread and the cap at the bottom of the thread, and have them re-tap it (properly with the three different stage taps)- then the little bit thats left covering the hole in the caliper should just drop out.
