The clips in that video (hero 3) are using a setting on the camera called "protune" which automatically changes the settings and adjusts itself... its meant to make editing faster because it means you dont need to apply filters, adjust contrast etc etc during editing, but as you can see, used in the wrong way and it ruins the video.
