Just have 5-10 channels that accept 0-5V and then sell sensors with calibration documents and build the software so I can manually enter the the sensor lookup table. Then you can sell any sensor. For some items like pedal sensors and steering angle they could be calibrated by the operator (like a video game steering wheel is calibrated).

For your layman offer a kit with the sensors and software preprogrammed.
