Thanks, I have read that and I think I now understand the effect of how the steering lifts the rear wheel and why ackerman is used but the article doesn't really explain what I was thinking about unfortunately.
When the steering wheel is turned you get to a point where the outside wheel starts to get pulled straight again. If you were to limit the amount the steering could turn it wouldn't happen.
