All of the previous advice sounds about right to me, that's how we run as a starting point.
When your driver gets more familiar with the kart, it's time well spent to get him/her able to adjust the carb on the move.
I got Aidan to sit in the kart at home, in full racing kit and find the carb adjusting screws without looking down. This progressed to simple adjustments on test days, doing no more than a few laps at a time with plug checks every 4/5 laps or so.
We did this using an old unsealed B1 engine so mistakes would be less expensive: one siezed B1 piston and a lot of trying later, he can now setup any carb spot-on in a few laps.
Takes time but it's well worth it!
