It could be a faulty sensor - I'll test it on another engine.

I don't think it's a momentary fuel line blockage
as there is no obvious affect on the RPM - it continues to change smoothly when the temp spikes.

There was plenty of fuel in the tank.

We didn't try another carb as we didn't have one with us.

Looking at the data again I have noticed that the spikes are related to corners. The spikes that occur at Stadium and Pylon are often quite large. Spikes that occur at the two hairpins are usually quite small.

The spikes rise smoothly to a peak and then fall smoothly.

I think I'll give the carb a rebuild and check the fuel line for any problems.
