Jetting too lean? (On track)

Ive been reading up on the internet about jetting on track, it tells me plenty about the engine 4-stroking when its too rich(high jet) however; when leaning it off to get rid of the 4-stroking, when go you know your at the point of optimum performance without going to lean.
