If it doesn't hold pressure on a pop off test the engine will either run badly or not at all. So it's worth doing just for that.
If the pressure drops very rapidly from the high pressure to the low pressure, it does feel as if the carb works better on track to me. I've still not fully worked out what makes one carb release pressure faster than another - they do seem to vary a bit.
I'm not convinced the actual values of the pop off pressure make a great deal of difference, but I try to get them at 10-12 and 5-6 psi if I can.
I'm sure there are some more informed opinions available, but the above info has kept me running so far.
