Thanks for all the replies, all with valid points, this is a debate after all!
Dellorto flow testings each jet then stamping, that would be the best way to supply jets, but unless they have some form of high speed flow test and stamping set up it is unlikely; the numbers would normally be done as part of the manufacturing process - possibly machined in rather than stamped. Also flow testing might have been done to establish flow against size, then jets are manufactured to a size - but not very accuratly as it might seem. If people have found jets measured 10 points out, it is unlikely a jet that measures 150 would flow what a 160 should so Dellorto mark it 160.
Testing is OK to sort out your own jets but for the average man it's difficult to identify the differences by one jet size change at the track, with changing conditions through the day and other parameters that change - one thing George warned off in one of his very good seminars at Kartmania; be careful with testing to sort one issue out when so many other things change through the day; you need to account for these things.
It doesn't matter what the number is on the jet of or the actual size of the jet - so long as you have a set of jets that flow ideally a linear increase as you go up.
I spoke to someone ref. Kart Genie jets and apparantly they don't gaurantee a 145 jet is 145; you just get a set of jets that go up in size linearly - the marking are just to identify them in order. Apparantly the 145 measures nearly always slightly oversize?
There are no real certainties with this - you need to trust Kart Genie or the accuracy of pin gauges. I haven't been able to find any reasonably priced pin guages so KG might be the overall best option, and I don't want to go through a load of jets to find a linear set either.
So after all that - not sure what to do now with my christmas prezzy money!!!
