Yes , it loses the more volatile elements over time. Six months in a sealed can of race fuel in cool even conditions is about the outside limit, so from a forecourt in a jerry can it is very likely to have become degraded to some extent.
Lower volatility fuel should not damage your engine but it will make it slightly more difficult to start and untimately make less power unless the engine is optimised for that fuel (ign timing, compression ratio etc)
You could still use it for running in / driver practice if you aren't racing at a level where you need to exactly match your race day set up. Alternatively, generators and lawn mowers are much more forgiving on fuel quality !
