I would suggest setting the carb back to how you got it and if you want the tick over adjust on the throttle stop on the carb and set everything up around this.

Just use sensible recommended gearing for the track and don't worry about a data logger for now. Unless you have a massive rear sprocket on you wont over rev the engine and with sensible carb settings don't worry about temp at this early stage. Having said that if you can afford one then get one. Remember air cooled engines ran for years in the cadet class without monitoring engine temp. Its a nice to have but not necessary at the moment.

I have never heard of opening your plug gap and you shouldn't need to do this so set it as recommended.

When you are setting your tick over if you havn't got a rev counter just set it so the clutch starts to bite and spins the back wheels and then back it off a little bit so it ticks over but doesn't pull the back wheels round.

Despite what people will tell you about these carbs and them being temperamental and going down randomely and needing adjusting constantly etc its not true. At the stage your at you really can set it and forget it and if your having problems then there's a problem that needs addressing. If the carbs built well and set up with reasonable jet settings just let your lad drive and enjoy.
