There are two answers:

The strictly technical, you will get new teeth divided by old teeth Times the old revs.

Thus if you have been on 80 at 16000 rpm and move to 81, you should see 81/80 * 16000=16200.
and at 16500, see 16706

If you were on 75 going to 74 at 16000 =15786

Of course if you were om 12000 revs then 81/80*12000= 12150.

The second bit is the practical, you may see more or less revs change because you haven't taken the same line, or because the change in sprocket makes the engine slower at a critical point.(Or a whole host of other reasons) Your power curve is vaguely S shaped, and the engine will accelerate fastest if it is kept between the bottom curve and the top curve. In particular if you sink into the bottom curve the engine takes much longer to accelerate and so is less likely to reach its top speed.
