Andy, generally speaking, use cellulose but like Winger says, check with the helmet manufacturer first.
if you buy cans that are made up in the paint shop, they do give a fantastic finish but be wary as to whether you want (or need) to use a lacquer as some of the paints don't need it but some do. I tried painting some gold on a helmet from a can and it looked great till I tried to lacquer it and it went awful!
With a bit of care and patience, you will get great results but I would suggest doing a test on a cheap helmet first as a practice.
