Going the other way we've found that the lessons we learned in a Cadet size chassis have crossed over to an adult chassis very well. Strangely enough the only exception has been the French 'Super Cadet' size class that we've flirted with for 3 years and hated, mainly because as you are finding nothing conventional seems to work.

Something that we've tried relatively recently and has helped a lot when looking for a quick set up is this. Only use your front width to get the feel of the kart right, so that turn in response etc. is optimised for the majority of corners at a particular track. Then balance out any understeer or oversteer with the back width. Stating the obvious maybe, but I've never seen it put that way in the text books.
