We always disconnected the fuel line and then ran the engine to use up any fuel in the carb,

Then carb off and engine and carbs put away inside the house - ,same for the tyres.

How long do you go between races? If you are out every week and keep the kart flat (as it would be on track) then you might get away without draining the fuel. If you store the kart upright (rear bumber on the floor - nose cone pointing to the ceiling then leaving fuel in could cause problems.
