Not sure exactly why on either point but:

With the valves, if they are lapped too much the contact area on the valve seat becomes very large and a groove forms around the valve. This is likely to make a good seal more difficult and also allows more heat to transfer from the valve to the seat, which probably causes further distortion.

As for the valve gap becoming larger, strange but true. Obviously different parts of the engine are expanding differently to cause this. Bear in mind the valve train extends from the bottom of the engine, perhaps the block or head is expanding enough to cause the slack.
