First off, silly question but you have removed the Governer, haven't you?
Next, have you played with advance keys and or GX160 flywheels? Too much advance will cause problems, check the key hasn't sheered off and moved the timing. Check the coil air gap. A tight .3mmm feeler will give the .2mm sliding fit required.
Next main jet, you need to go a long way before you need anything bigger than a 75. 72 will work just fine. Anything over 80 might give the sort of symtoms you describe.
If you're sure the carb is completely clear, try another one. Check you're doing the tappets on the right stroke and that the cam is aligned correctly.
