Understand the principle of Ackerman angle, first. It's NOT what most people will tell you! Many will tell you to 'remove' the 'Ackerman' ...... in 99% of karts that's IMPOSSIBLE. You can reduce or increase it but NOT remove it!

Here's an interactive piece of software and explanation of it. Scroll down to the section on Ackerman steering. It's a 'toy' animation to play with and watch the effect of Ackerman angle or No Ackerman angle.

What you did wrong was move the Ackerman angle settings WITHOUT resetting the 'toe-in/out' (Tracking).
