Gx160 plug gap performance

So I've recently got a t2 clubman for my boy got it dyno tested results were good but if you blip the throttle from idle it bogged then puffed then from 2.500 was fine and it did this at idle all the time

Long story short turned out to be the plug put new plug in and it's fine
The gap on the old plug was twice as big as the new one

I'm leaving it as standard I was wondering two things

1. Would that effect dyno performance
2. Is this a none thing for places like rpm and ufo to do in a way to gain a bit more performance

Like I said earlier I'm leaving mine as standard as it is more responsive from idle I'm just interested to find out why the plug gap was bigger
