The clutch mechanism is electro-hydraulic activated by a paddle behind the steering wheel when pulling away and by software for gearshifts.
As a simple real world example, just watch Top Gear with Hammond in the Renault. He "stalled" it a million times before pulling away (caught by the anti-stall software of course). If it were simply a case of pressing a button, pulling away wouldn't be an issue and the anti-stall would only ever need to take over during a spin.
Another example is watching them pull away after a pitstop. Some light up the rear wheels, some take a couple of stabs at pulling away, some "stall", some don't make to their pitbox at all (Fisi).
