Most of the claim should be straight forward e.g. damage to van will be the repair costs so ling as these are not greater than the value of the van. With the trailer have a look on ebay ot the market place and get some evidence of the replacement cost or, if it was fairly new, the new price.
Damage to the karts you may need a quote or if they are beyond repair then get examples of replacement karts of same age. If they have been damaged you may also need to argue that repairs are not a good idea as they can not be restored to a suitable condition.
The part that could take the longest is the whiplash claim - you do not always want to settle quickly as the damage could be long-term and you would want more.
Your insurance company may pay for legal advice on this.
