Long pedal!. Have you checked your axle / disk location as what you are describing matches exactly a phenomenon known as 'knock off' not the Sunday market type! But movement in the axle/disc assembly pushing the pads back so that when you next apply the brake much of the pedal travel is simply returning the pad to the disc surface before applying pressure much the same as how you need a pump ot the pedal after replacing pads. Knock off was an alarming feature of the early Girling Zip Powerstop system fitted to the 250s from 1973, to race one of these required a system of at least 1 pump of the pedal while still flat out on the corner approach to ensure retardation was available when you most wanted and needed it!
