"The pluraility of duties".....expected to do anyhting and everything?

At some meetings club volunteers do the jobs. For instance the signing-on team at small events is often drawn from the parents present that weekend, there's no licence. But they're seen as "officials". Maybe also jobs like paddock marshal, incident marshal, dropped nose judge of fact etc.

Maybe you could give us some context, these phrases on their own are difficult to get your head around.
