I am sure some of the large manufacturers (CRG, Tonykart, Arrow) will have tried using theoretical modelling. In my experience most modelling is then verified in "real life" trials so in the end you spend your time confirming that you understand the theory OR as in many cases the theory doesn't translate in practice.
As a user of the equipment you are working with materials which are constantly changing due to operational use both damage and work hardening/softening so any theoretical modelling would need to predict the effect of that which would be very difficult, particularly given the rate we seem to bend karts at the moment!!.
