As SimonS says, the actual optimum performance window of tyres is pretty narrow in terms of both pressure and temperature. With a car, your setup options are greater, meaning you can affect tyre temperatures without having to alter tyre pressures.

With karts, this is much more difficult. We typically end up altering pressures to get the temperatures within the correct window. Of course, altering pressures in a kart has the secondary affect of altering how well the kart handles bumps and the overall responsiveness of the kart.
