Why use a seat that is so soft and light only to stiffen it up and make it heavier again by fixing large aluminum plates to it?

If seat stiffness really does make a difference:

1) Why fix stuff to it that makes it stiffer in places, altering the "specially designed" construction?

2) Why don't the seat manufacturers make the seat flex where it matters and nice and strong where it doesn't (I guess because they don't know if/where it matters)?
