tyre pressures (maybe temperatures, across the tyres) before and after a session

front and rear track
toe in/out

castor/camber

weight/c of g

fuel level
oil used and how much

gearing

carb settings

weather conditions
air temp, pressure, humidity
track temp

seat stays/seat position/tightness of chasis

its good to record which consumables you use too and maybe the hours run of chains and bearings, carbs

excel is my prefered tool also and its easy to evolve a system to record all your data

keep it simple to start with and just record everything you change on the kart between sessions
