W60 engine temp

Hi all.

I am interested to know the thoughts on engine temp for a W60. My understanding is that if an air cooled engine is well built and the carb set up right the temp would take care of itself. How beneficial is it to run to this optimum temp or can it be gauged by performance on the track and the temp is what it is. Hope this makes some sence.
