On F3 and GT cars you shouldn't really have a problem. The F3's tend to run 4-pot Brembo's and, assuming you've mounted the calipers the right way up, they'll wear pretty evenly. The pads usually "go off" a long way before they're fully worn anyway because the worn pad has a greater tendency to overheat.

A decent GT car (GT1 or GT2) will usually be running 6-pot calipers. Again, your wear should be pretty even (so much so, in an endurance race you'll run them to the last few mm of pad). I can't remember but I think GT3 and GT4 are limited to 4-pot calipers and these, coupled with large disc/pad sizes will produce uneven wear.

In the past many cars ran with 4 pads per front 8-pot caliper but I think these were banned. These had their benefits but were a real pain in endurance racing where pad changes are a necessity. In the late 70's/early 80's there was a fashion of running two 2-pot calipers per wheel but again, I think way banned.

Back to karting, if the brake is properly serviced and setup and uneven wear is still an issue, it will probably be endemic to that particular system. In which case, there's not a lot you can do about it.
