hi Paul,firstly for initial jetting you need plenty of air so either ditch the air filter, until you get close on jetting or fit a clean unit.
Then- to jet the engine run a couple of tests... run the kart a few laps and check plug colour (aiming for light brown tip), check the revs reached, with a biggish back sprocket.
The jet that gives you the highest revs will be the one to use for.(symptoms of too rich is it sounds like its underwater, symptoms of too weak and it feels strangle at top revs/wont reach top revs)
Then, gear the kart for best lap time. (going down and down on the rear sprocket, from the big sprocket used for jetting, until you go slower and just go back up one tooth)
